This is typically one my favorite times of the year because I love the idea of a fresh start. This year, however, I was feeling less than enthused about formulating goals for the new year.  It has become apparent that I like making New Year's resolutions a lot better than I like keeping them. MYO Magic Shell Ice Cream Topping

This is one of those ideas that I saw first on one of my favorite blogs One Good Thing by Jillee. One of Jillee's readers had submitted a recipe for Magic Shell ice cream topping using Nutella and coconut oil.  Because I just happened to have both of those ingredients on hand, I decided to try it myself.  (I actually hesitated sharing this on my blog because the cocoa in Nutella is not Fair Trade.  That is one reason that I will not make a habit of buying this product.) Convenience Foods

I am old enough to remember life before convenience foods.  I remember when TV dinners made their debut.  On occasion, my mom would buy some of those frozen dinners in compartmentalized foil trays.  I loved the way each food was contained in it's own little section of those trays.  I loved that I was permitted to eat my TV dinner on a tray on the floor of the living room just inches away from our living room rug.  I loved that I was allowed to watch TV while I ate it!  (Daytime TV was a big no-no at our house when I was a kid, so this was a real treat!)  I'm not a fan of those … [Read more...]

Let’s Eat at Home Tonight!

Let me be honest with you.  I like to go out to eat.  I like having a whole menu of choices.  I like not having to cook the food myself, and I especially like not having to do dishes when the meal is over. So why not just go out to eat every night?  Here are a few reasons why we don't do that: 1.  Restaurant food is expensive. Low Carb, Sugar Free Icy Treat

When the weather is as hot as it's been here in Pennsylvania this summer, we long for an icy cool treat.   Before diabetes made its appearance, Grandpa used to enjoy cool pops.  You know what I mean--those little plastic tubes of sugar that you pull from the freezer on a hot summer day.  Those treats are a no-no now that we are counting carbohydrates.
